Description
The production of Arlene Series, our iconic wine, demands maximum delicacy in all work, which is why We combine several vinification strategies. Starting with the vineyard selection: for Malbec a vine vineyard was chosen, since that the canopy structure of the vine protects the grapes from extreme sunshine that can affect its aromas. The first step in the production is destemming, which was carried out in manually, grain by grain. This task is very slow and expensive, but In this way, the berries are kept intact and a phenomenon called carbonic maceration, which improves significantly the aromatic intensity. The grapes are placed manually in new French oak barrels, controlling their temperature through the use of dry ice. This wine is fermented in first-use French oak barrels. The barrels are opened and then vatted with the grapes, closed and Maceration is done by rotating the barrels on wooden rails. The Total maceration is 30 days. The wine is then aged for 18 months in French and American oak. Fermentation in barrels allows the perfect integration of fruit and wood, optimizing extraction, resulting in a very powerful wine but with soft tannins. At the end of its parking in barrels, the cut is made with a minimum percentage of Cabernet Sauvignon and Cabernet Franc that gives it the necessary touch of complexity and spicy aromas, which complete this wonderful blend.
Tasting notes & pairing
Very deep black color, aromas of tobacco and black fruits. In the mouth it is long and silky. Its acidity stands out and freshness at the end of the mouth.
